Why cup measurements need the ingredient named

A cup is a unit of volume — the space something occupies. Grams measure mass. The bridge between them is density, and density changes completely from one ingredient to the next. A US cup holds 236.6 ml of anything, but filling it with flour gives roughly 125 g while the same cup of granulated sugar gives about 200 g. That is a 60 percent difference from one identical scoop, which is why a converter that ignores the ingredient will quietly ruin a recipe.

Baking is where this matters most. Bread and cake formulas depend on ratios of flour to liquid to fat; being 25 g out on flour changes hydration enough to shift crumb and rise. Cooking is more forgiving — a little extra rice or oil rarely breaks a dish — but the arithmetic is the same either way.

Worked example 1: a cake recipe in cups

The recipe asks for 2 cups all-purpose flour, 1 cup granulated sugar, and 1/2 cup butter. Converted: flour 2 x 125 = 250 g, sugar 1 x 200 = 200 g, butter 0.5 x 227 = 113 g. Sugar and butter sit close together in weight per cup while flour is far lighter — the light, airy one is exactly the ingredient most likely to be mis-measured by scooping.

Worked example 2: spoons for small quantities

One tablespoon is 14.79 ml. For honey, at roughly 1.42 g per ml, that is about 21 g — noticeably heavier than a tablespoon of water at 14.8 g. Sticky, dense ingredients like honey, molasses and syrup are where volume-to-weight surprises people most, and also where a scale beats a spoon you then have to scrape clean.

Worked example 3: US cup versus metric cup

An Australian recipe calling for 1 metric cup of rice means 250 ml, which at 0.80 g/ml is about 201 g. Reading it as a US cup gives 236.6 ml, or 190 g — about 5 percent short. One cup of rice will not ruin dinner, but across a five-ingredient bake the errors accumulate in the same direction and the dough tells on you.

How to measure so the numbers hold

For flour and other powders, spoon the ingredient into the cup and level the top with a straight edge. Dipping the cup into the bag compacts the flour and can add 20 to 30 g per cup — the single largest source of error in home baking. Brown sugar is the exception: recipes assume it is packed down firmly, which is why its density is so much higher than granulated sugar.

Butter is easier than it looks. A standard US stick is 113 g, or half a cup, and the wrapper is usually marked in tablespoons. Liquids should be read at eye level in a clear jug rather than a dry-measure cup, since the meniscus makes a surprising difference at small volumes.
